Tired? Achey? Irritable? Restless? You’ve come to the right place. David Urso’s bone broth with escarole and white beans can cure what ails you. Containing glutamine, glycine, and collagen, bone broth boosts muscle mass, cures sleep disorders, improves the immune system, aids joint health, and even, they say, reduces cellulite. But mainly it soothes the cramped hands of jewelry designers during the busy holiday season. Here’s how David puts it all together:

Blanch beef bones in boiling water for 20 minutes, then roast them at 450 degrees along with carrots and celery so they brown and caramelize. Deglaze the pan with wine. Put the bones, garlic, and onion in a large stock pot, add just enough water to cover, and simmer on low heat for ten hours. Strain the broth. Add tiny meatballs made with local beef, plus tons of parsley and freshly shucked pole beans (the last in the garden!). Add white beans and cook 20 minutes. Garnish with escarole and a little fresh tomato, sprinkle with Parmesan, and consume.
